Finde extralargo: receta x 2! - Extra long weekend: recipe x 2!




Hace un tiempo que hago ésta receta para la mayoría de "los 29". La saqué del programa de "Cocineros argentinos" (hay veces que engancho un poco del programa entre escuela y escuela... ¡no vayan a pensar que alguna vez llegué tarde por anotar alguna receta!, ni que la iba memorizando en el camino y la anotaba al llegar....).
Como el 29 no la pude hacer porque nos fuimos a Rosario, a ver al Padre Ignacio, ésta vez fue de 30 ¿Y?.
Un comentario de Lucía de eralamaga me hizo darme cuenta que nunca había posteado la receta, si bien había subido fotos de ella... así que respondiendo el clamor popular... aquí va la receta!!!

It´s been some tme I prepare this recipe most "29th". I took it from the TV programme "Cocineros argentinos" (sometimes I can watch a little bit of the programme when I arrive home from school and I´m leaving to another... don´t you gonna think I ever get late for writting down a recipe or that I memorize it on  the way and write it down when as soon as I get to school...)
Since I wasn´t able to cook it on 29th. becouse we went to visit Father Ignacio (a healer priest), this time I prepared it on 30th. ¿So what?.
A comment by Lucia from eralamaga made me realize that I had never posted the recipe, even I had posted photos of it... so answerin people´s voice... here goes the recipe!!!







Ñoquis de sémola a la romana

Ingredientes
Leche, 1 litro
Sémola, 250 g.
Manteca, 50 g.
pizquita de nuéz moscada.
 1 Huevo
2 dientes de ajo rallado.
 Queso de rallar
Sal y pimienta a gusto


Preparación

  Calentar la leche con la manteca, la sal y la pimienta hasta que hierva.
  Agregar la sémola en forma de lluvia mientras se revuelve con cuchara de madera.
 Cuando la sémola este cocida y se desprenda del fondo de la cacerola, retirar del fuego.
  Agregar el huevo y seguir revolviendo.
  Extender la mezcla sobre una placa (parece una salsa blanca media dureti), no hace falta que esté enmantecada.
Mandar al frío un rato.
 Cortar los ñoquis. se puede hacer con cortapasta en círculos, pero yo los hago en cuadraditos con cuchillo. (medio "alaquetecríaste")
  Colocar los ñoquis de sémola en una asadera enmantecada que pueda ir al horno.
  Espolvorear los ñoquis de sémola con el queso rallado grueso.
  Llevar a horno (al mango!) hasta que los ñoquis de sémola estén dorados (20 minutos mas o menos).
 Me gusta servirlos con un salteado de verduras: cebolla (morada queda mas top), ají rojo, brócoli(primero cocido al vapor) y espinaca, agregarla al final, sólo para  que se caliente, cuanto menos cocción... mas nutrientes!!. Ahh, con el otro diente de ajo, agregalo ralladito en el salteado si te gusta!

Roman semolina gnocchi

Ingredients:
250 g semolina
1 liter milk
 grated Parmigiano
50 g butter
1 egg
2 garlic clove
Salt and pepper.
a bit of nutmeg

Preparation:
Bring the milk to a boil, add the butter, salt, pepper, and 1 grated garlic clove over moderate heat. Gradually stir in the semolina. The mixture will become quite thick; continue cooking until it boils and remove the pot from the fire. Add the egg and go on stirring. Mix well and spread the mixture  on a baking pan (there is no need to oiled it).
Let the semolina cool for a while, and cut it into circles or squares .
Butter a pan and layer the squares in it, spreading a little grated cheese on the gnocchi.
Bake the gnocchi 20 minutes in a really hot  oven, until they are golden.
I like to serve them with sauteed vegetables: onion ( the red one looks cooler!), red sweet pepper, broccoli (steam it first), spinach (add it at the end, less cooked... more nutrient!!!. Ahh... add the other grated garlic clove, if you like it!!!

Luego de mucho tiempo sin tiempo, estos últimos dos días pude volver a disfrutar de cocinar... luego de la siesta de hoy, hice la receta de la torta de ricota de mi tía Vivi... y ácá la comparto...



Ingredientes
Masa
 1 1/2 taza de harina, (ésta vez la media fue de harina integral)
1 taza de maizena
1/2 taza escasa de aceite
 Polvo para hornear, 1 cucharada
1 taza de azúcar
1 Huevo
2 Yemas
 Esencia vainilla
Cognac  (o alguna bebida espirituosa, diría mi abuela)
Relleno
Ricota, 500 g.
Azúcar, 1 taza de té

 
(La mayoría de las veces cocino de noche... disfrutar del solcito de otoño mientras cocino... una delicia)

(Most of the times, I have to cook in the evening... so enjoying the autumn sun while I cook... is delicious!)


Preparación
  Batir los huevos con el azúcar. Agregar el aceite, el cognac (hoy usé oporto) y la esencia.
Agregar los secos: harina + la maizena + polvo de hornear en forma envolvente. Dejar en la heladera, media hora, mínimo. Luego estirar y poner en un molde enmantecado.

Para el relleno: mezclar la ricota con el azúcar.Versión "tengotiempo": las dos claras sobrantes, batidas a nieve con la ricota. Queda super cremosa!. Hoy tenía nueces... y adentro!
Y tu casa se va a llenar de ese aroma...

 After a long time without time, these two last days, I was able to enjoy cooking again.. today after having a nap, I made my Aunt Vivi´s Ricotta cake... I hare the recipe with you...

 

Pastry
Ingredients
1 1/2 cup flour.
1 cup starch
1 cup oil
1 teaspoon baking powder
1 cup white sugar
1 egg
2 eggs yolk
Cognac (or any other "spiritual drinking" as my grandma says)
1 teaspoon vanilla extract


Filling
ricotta 500g
1 cup sugar


Preparation
Mix eggs, yolks and sugar. Add the oil, cognac and vanilla extract. Add the flour, strach and baking powder
Keep refrigerated for half an hour.
Then roll out the pastry and lay it in a buttered baking pan.
For the filling: mix ricotta and sugar.  The "Ihavetime" version: yuo can whisk  the egg white and add them to the ricotta. It is super creamy!. Today I had nuts... so I added them too!
Bake for half an hour in moderate oven... and our home will smell dellicious!!
